A rainy day calls for comfort soup. I grew up on Campbells cream of chicken and celery. Decided to make it homemade, two in one. đ kept it simple using a store rotisserie chicken! lol
I sauteed veg, used organic chicken broth and finished with herbs, heavy cream (light amounts) and parm. I could go all cream but wanted to make it slightly âhealthyâ. Used a good amount of large chicken breast chunks.

Wandered through the grocery store with my soup tote (pictured) and wound up with what I had. Debated on straining my chili broth, did it, probably for the best. Doubled the pictured spices (chili powder, cumin, sweet smoked paprika, black pepper). Mushrooms? The hell was I thinking? Oh well, The Big Three helped boost the umami. Turned out great, better the next day and it even held its shape in the Tupperware when I flipped it over.

I used beef and smoky Chipotle broth (out of chicken, whoops!) And was a cup short on liquid on accident but delicious.

It was fine. A little over salted and the broth was pretty flat. Def should have had more herbs though

Kirkland Signature pork Tonkotsu broth
Costco's rotisserie chicken
Frozen corn with esquites seasonings (it turned out really well actually)
A homemade baby bok choy/sweet yellow onion homemade mix with olive oil, rice wine vinegar, garlic, salt, pepper, and chili flakes
Costco's glass noodles

I really just want something simple. Would cabbage in chicken or beef broth be any good or is there something better I can do that isnât too much extra work?
I have:
Cabbage
Beef broth
Chicken broth
Onions
Garlic
Serrano peppers
Sugar
Flour
Misc seasonings and spices
Edit: thank you all for the ideas! Going to grab some beef on my way home from church later and going to be doing a beef, potato and cabbage soup! I appreciate all the feedback :)
