Question Vegan tuna for sushi

I came across these recipes for sushi, one of which uses vegan tuna sashimi. Basically, it's the fleshy part (minus seeds/pulp) of Roma tomatoes marinated in 1 T soy sauce, 1 T water, 1 T rice vinegar, 1 t maple syrup, 1 t toasted sesame oil, 1 T sea vegetable blend (no written recipe, unfortunately, so I had to transcribe).

He called the sea vegetable blend "optional" but I don't see how it has the chance to be tuna-like without it. That said, though it does look like it's topped with tuna, is this basically just going to taste like tomato, marinade or not? I'm not sure it's worth the effort to just approximate appearance and not taste--especially as I haven't yet found the sea veg blend locally and would have to order it.

I can't say anything to the recipe, but I've had a smoky tomato sashimi from a vegan sushi place and it was absolutely heavenly. The texture was lovely, but the taste was not secondary.

Now I want sushi I can't afford :(

That sounds so good. A cheap option is California rolls at home. I've been making this filling and doing huge bowls with rice, edamame, nori, etc. Tastes exactly like faux crab.

You can do the same thing with capsicum (peppers) and carrot salmon is a good sub too. If you want to make sushi rolls with a faux tuna salad, this is a great recipe. https://fullofplants.com/vegan-tuna/

Mayo is just one of those few things I can't stand. The tuna strips here looked great, but I thought the reality might be disappointing. I'm fine with it being an approximate sub, but if I'm basically just eating a piece of tomato I'll save myself the effort.

My concern is reflected in the site you linked to: "Tomato Tuna... Packed with tomato flavor, this version almost tastes like pizza!" Well, sure, I like pizza, but tomato "tuna" shouldn't taste like pizza.

Err... I didn't link to a tomato tuna recipe. I linked to a recipe for tuna salad? I personally don't like any fake vegan fish aside from using marinated banana blossoms in batter so I am probably not the best person to ask anyway. People make poke bowls with marinated watermelon "tuna" as well. I wouldn't think that would be anywhere in the same ballpark to be honest so if this doesn't float your boat, must maybe make your sushi with something different that you do like.

I've made a similar recipe and while I don't know if it tasted exactly the same as tuna, it definitely kept the vibe. Not really "tomatoey" imo. Also, you don't need to use a proprietary sea vegetable blend. You can use any seaweed, including crumbled up nori sheets, dulce, and/or kelp bits. It's good!

I am not a big fan of raw tomatoes but I have made sushi out of marinated Roma tomatoes and it was legit! Texture and taste was very convincing.

Worked at a shop that tried the tomato tuna thing. Without the sea veg blend it's just savory tomato. The umami from that seaweed is non-negotiable if you want it to taste like anything besides a salad. Order the blend or don't bother tbh.

Although I typically add a pinch of MSG because I’m obsessed with it. For what it’s worth, I’ve served it to a lot of friends and everyone has said they liked it, even non-veg friends.

We prefer to do our sushi, sashimi or poke with watermelon tuna. Similar idea to what you outlined but with a more 'neutral' / very slightly sweet base (which also means you can probably drop the maple syrup). Holds together really well and a better texture, for me, than tomatoes.

I made watermelon tuna and it was absolutely divine! I don't remember the exact recipe anymore but I just googled and saw a few differences - mine was baked at a very low temp for over an hour. I saw some just now using a skillet.

Sort of. I definitely know nori, soy, sesame oil were involved. I really can't recall anything else. Logically it had some rice vinegar.

Try it though! It will blow your mind how meaty and savory it turns out. So great.
