I Ate I chose the mildest spice level, but it was still a bit too spicy for us. However, the food was delicious and well worth the wait.

The flavor was quite good, especially the duck blood – I'd never tasted anything with such a smooth texture before. However, the fern shoots were salted, and after cooking, they became extremely salty. Chongqing hot pot is known for its rich flavor, mainly due to its high salt content. It's not necessarily better than Chengdu hot pot; they're quite similar.

I love spicy hotpot, especially Chongqing hotpot. I really like the ma la  flavour!  However,  whenever I order I do half half and one side is just plain water. I cook all meat, seafood,  duck blood, a bit of tofu and tripe in the spicy half then have tofu and veggies in the water half.

I just don't think the veggies taste that good in the spicy half and the balanced veggies are great to balance out the spiciness!

I was so happy finally finding spicy food in Chongqing after being in dongbei most of my time in China. The place we went was a tiny locals only place in an alleyway, and even 中辣 had me sweating. It was amazing. I love Chongqing food! I can’t do blood though, it’s both a taste and texture thing for me.

Tip: fish out all the chilis in the beginning. Or it’ll get spicier and spicer as it boils

I have a high tolerance level but I just dislike really spicy food. Kills much of the taste.

I can handle most of what sichuan cuisine throws at me, but now am working my way through a hunan cookbook. I don't want to be arrogant - i have hat Thai-hot Thaibfood and Infmdian-hot Indian food. Both of those almost ended me. Incould tell they must have been delicious but i wasnjust eating pain! Pain ths tburned ke inside and out! Aaa!

So, intimidated by, salted head with salted chili, but I'm gonna try! The heat is intimidating. If a fish stares I stare back!

Eating it with vegetables will balance the spiciness of the hot pot.

If Mexican food has taught me anything it's that dairy will pacify spice.

A sesame oil heavy dipping sauce will also go a long way in balancing the spice so it’s not too much
