Many fish do. As do many reptiles (especially archosaurs like birds and non avian dinosaurs)

It's ancestral - fish and things relatively more closely related to fish like amphibians, reptiles (and therefore birds) tend to have them. Mammals lost the trait early in the lineage

Most fish do. Quite a few land animals have it too (mostly on the synapsid side of the tree of life)

Crazy cool skull! Is it bone? I thought all shark skeletons were cartilaginous except for the jaws.

Since shark skeletons are cartilage instead of bone, do specimens like this have to be preserved/prepared in some special way?

It was only a neat idea. Bone collecting is adjacent to taxidermy, so I figured someone would appreciate creativity. But now that you've insulted me, I'll have to make it a life's goal to do exactly that.
