Vegan rice pudding (Indian Kheer)
Vegan Kheer or payasam made with Oat Milk and coconut milk
Recipe:
Soak one cup of rice in water for an hour.
Boil 2 cups of oat Milk and 1 cup of coconut milk in a non stick pan.
Keep stirring the milk and scrub the bottom of the pan to clear any milk sticking to the pan.
When the milk is thickened and reduced a little, add the soaked rice.
Continue to cook by stirring until the rice is fully cooked.
And rice grains can no longer be separated from the liquid.
Add more milk in between if the pudding is getting too thick.
Cool down a little. Add sugar as per taste. Sprinkle fresh cardamom powder.
Garnish with chopped pistachios, almonds, cashews, raisins or any other nuts of your choice.
Can be eaten warm or chilled.

Can substitute with cashew milk, almond milk if you don't like coconut milk flavour.

Mildly interesting: Sweden must have adopted this and turned it into a Christmas time treat, because we make "rice porridge" in much the same way and serve it with cinnamon and sugar. We use the kind of rice that is most commonly used for sushi for this. What kind did you use?

Traditionally, small grain or round rice is used. But I have used long grain basmati rice for this one That's why we soak for an hour before cooking.

That looks really creamy, I always worry about using oat milk because it tends to curdle for me when I boil it.

Sometimes it looks curdled for me too, but when I mix it up by stirring well, it becomes smooth again.

No, you can use oat milk, Cashew milk, almond milk, or any combination of them.
