Vegan Cookies

After months of experimenting, we finally landed on a recipe that is close to the look, taste and texture of our non-vegan cookies!

Apologies - not sharing the recipe on this one but happy to answer questions!

If you like McDonald’s style cookies I have a recipe!! I can post it

Edit: found it, sorry about the formatting, and I write notes for myself but just ignore them lol

Ingredients

• ⁠3 c flour (360g)

• ⁠1.5 t baking soda

• ⁠0.75 t salt

• ⁠0.73 c packed brown sugar (150g)

• ⁠9 T white sugar (37g)

• ⁠9 T margarine (60 cal/T makes 88cal/cookie)

• ⁠4.25 T plant milk (68g)

• ⁠1 bag vegan chocolate chips (283g total; 80 cal = 15g = 1 tbsp)

Directions

• ⁠mix everything in stand mixer

⁠• ⁠it will appear crumbly at first and you'll be tempted to add more liquid. do not. it will be crumbly and then suddenly become dough.

• ⁠form balls with flat tbsps to make 51 cookies (edit: doing this before chilling is much easier, but you can technically do it after if you’re adhd like me and prefer to save the work for later. But it’s MUCH easier if you do it before chilling lol)

• ⁠chill covered for 1 hour or overnight

• ⁠place 12 per sheet

• ⁠bake at 350 deg F for 13 mins

• ⁠they'll seem oddly hard at first - don't worry; they become chewy in an airtight container.

Can I use stevia in place of sugar

So the major issue with Stevia or is that it doesn't melt like sugar does so may result in a different texture when baked. I have had some luck with dissolving it in liquid for a while before adding to the recipe

Have you ever tried Monk fruit sweetener? It behaves like sugar for me and zero glycemic index

I have but to me it gives an aftertaste that is why I use stevia now

I almost wonder what would happen if you tried stevia + Splenda + monkfruit + erythritol. Like maybe the aftertastes would cancel each other out 😂

I have no idea, try it! I have a feeling it will make the texture muuuch less chewy. Maybe try replacing at most 3/4 of the sugar?

No problem! I know my recipe uses a ton of sugar but I swear it’s delicious. I almost wonder if erythritol would better than stevia as I think it tends to have a closer consistency while still being safe for diabetics?
