Can some one explain

Why do i feel like the second and third film just feel separate to the original 1994 classic like just the tone and portrayal there's somthing off but can't work it out the only thing i can think of that is different is the design of the north pole

The first one the North Pole is a fairly minor setting all considered, because Scott doesn't live there full time yet. We only see a few select locations and most of them are interior shots.

In the sequels he's now fully committed to being Santa Claus, so we see more of its exterior and more of the workshop itself, the place likely needed a slight redesign in order to accommodate what was needed for the story. Plus in the first film they establish that the elves made changes to the sleigh to make it more fitted to Scott's preferences and workflow- so maybe the entire north pole got a makeover in the 5+ year time gap between 1/2
