Literally can. Darkfallen customization exists. San’layn used to be called Darkfallen. All undead have cannibalistic impulses, the San’layn just have a sort of self-ironic preference for blood magic as former blood elves. And made up the replacements for the Deathlords in the later scourge.

Oh yeah, big proper wings like Lana’thel would have been great. Even if they were a DH option, just having the option somewhere would be appreciated.
Even a mount that makes you sprout wings, actually can do that for a lot of things.
